1 cup (tea) of orange juice (240ml)
1 cup (tea) of water (240ml)
1 cup (tea) sugar (180 grams)
300 grams of sour cream
270 grams chopped semisweet chocolate
1 tablespoon orange liqueur (Cointreau) (optional)
Directions
- Peel the pears, leave them with the stems and make a straight cut under them to stand upright.
- Put them in a pan and add the sugar, orange juice, white wine and water.
- Bring the pan to medium low heat, cover and let the pears cook for about 15 minutes.
- Remove the lid, make a hole in each pear with a knife and cook the fruits for another 15 to 20 minutes with the pan uncovered.
- Set aside for the pears to cool.
- To make the ganache, melt the chocolate in the microwave every 30 seconds or in a bain-marie and mix well with the cream.
- Add the orange liqueur and mix again very well.
- Serve the pears already cold in dishes of your choice, pour a little of the fruit cooking syrup over the top, then a little of the ganache and the pears are ready to eat.
