Ingredients
1 lb (450g) mushrooms, sliced
1 large onion, chopped
2 cloves garlic, minced
4 cups (1 liter) chicken or vegetable broth
1 cup (250ml) heavy cream
2 tbsp (30g) butter
2 tbsp (30g) all-purpose flour
Salt and pepper, to taste
Chopped fresh parsley, for garnish (optional)
Directions
- Melt the butter in a large saucepan over medium heat. Add the onions and garlic and sauté until the onions are translucent, about 5 minutes.
- Add the mushrooms to the pot and continue to cook until the mushrooms have released their liquid and are softened, about 10 minutes.
- Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 2-3 minutes, until the flour is fully incorporated.
- Pour in the broth, stirring constantly to prevent lumps from forming. Bring the mixture to a boil, then reduce the heat and simmer for 10-15 minutes.
- Use an immersion blender or transfer the soup to a blender to puree until smooth.
- Return the soup to the pot and stir in the heavy cream. Heat the soup gently until hot, but do not boil.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley if desired. Enjoy!
