Ingredients

  • 2 avocados or small avocados

  • 2 cups of lentils

  • 1 cup cherry tomatoes, cut in 4

  • 1/4 of chopped red onion

  • 1 lemon juice

  • chives to taste

  • parsley to taste

  • cilantro to taste

  • olive oil to taste

  • salt to taste

Directions

  • Wash the lentils, drain well and soak for 12 hours in a bowl of water until completely covered. 
    After soaking, drain again and wash the lentils under running water.
  • Transfer the lentils to a pan and cover them with enough water to leave 2 inches of water above the lentils. 
    Season with salt to taste and cook for approximately 15 minutes or until cooked through but al dente.
  • Drain the water and season the lentils while still warm with the chopped red onion, salt to taste, the sliced ​​cherry tomatoes, the chopped parsley, chives and cilantro to taste and the lemon juice. 
    Mix well and add the chopped avocados.
  • Season the ingredients with olive oil to taste and mix gently. 
    Transfer to a container, leave in the fridge for a few hours if you prefer, finish with chopped parsley and chives on top and the lentil salad is ready.Lentil Salad
