Ingredients
2 avocados or small avocados
2 cups of lentils
1 cup cherry tomatoes, cut in 4
1/4 of chopped red onion
1 lemon juice
chives to taste
parsley to taste
cilantro to taste
olive oil to taste
salt to taste
Directions
- Wash the lentils, drain well and soak for 12 hours in a bowl of water until completely covered.
After soaking, drain again and wash the lentils under running water. - Transfer the lentils to a pan and cover them with enough water to leave 2 inches of water above the lentils.
Season with salt to taste and cook for approximately 15 minutes or until cooked through but al dente. - Drain the water and season the lentils while still warm with the chopped red onion, salt to taste, the sliced cherry tomatoes, the chopped parsley, chives and cilantro to taste and the lemon juice.
Mix well and add the chopped avocados. - Season the ingredients with olive oil to taste and mix gently.
Transfer to a container, leave in the fridge for a few hours if you prefer, finish with chopped parsley and chives on top and the lentil salad is ready.
