Ingredients
- Cake
200g butter, softened
200g caster sugar
1/2 tsp fresh lemon juice
3 eggs
50ml whole milk
220g self raising flour
1/8 tsp salt
1/4 tsp baking soda
- Lemon Drizzle
60g caster sugar
2 tbsp fresh lemon juice
- Lemon Glaze
50g icing sugar (also known as confectioner’s sugar)
2 tsp fresh lemon juice (add more or less depending on consistency)
Directions
- Preheat your oven to 180 degrees celsius or 350 degrees fahrenheit;
- Grate the zest of two lemons into your mixing bowl;
- Add 200 grams of soft butter;
- Add 200 grams of caster sugar;
- Cream this together until it’s really light and fluffy;
- Squeeze out 20 milliliters of fresh lemon juice;
- Break three eggs into a bowl and add in 50 milliliters of milk;
- Add in a half a teaspoon of your lemon juice give it a little whisk to break up the eggs;
- Add your eggs into your butter mix in three increments;
- In a bowl of 220g self raising flour, add 8 teaspoon of salt and a quarter teaspoon of baking soda;
- Give it a little mix together;
- Add to butter mixture and mix;
- Stir with hands it through until the flour has combined;
- Put our batter into pour your batter into your pan (buttered and lined) and smooth it out;
- Bake for 50 to 60 minutes for 180°C;
- In a bowl, add 60 grams of caster sugar and 2 tablespoons of freshly squeezed lemon juice;
- Give that a good stir until all of the sugar has dissolved;
- Punch holes in the cake to penetrate the syrup;
- Add the drizzle;
- In a bowl, add 50 grams of icing sugar;
- Add two teaspoons of lemon juice over the top and give it a good stir until it’s nice and smooth;
- Add to cake;
- Your Lemon Drizzle Cake is ready!
