Ingredients

  • Sauce
  • 200g PortoBello Mushroom

  • 1 onion

  • 4 cloves of garlic

  • 1 girl’s finger pepper

  • 1 bay leaf

  • 2 Tablespoons unsalted butter

  • 2 Tablespoons of Flour

  • 100ml white wine

  • 700ml whole milk

  • Nutmeg to taste

  • Salt and black pepper to taste

  • Mounting
  • 300g of fresh pasta

  • 400g of Mozzarella

  • 200g of Ham

  • Parmesan to taste

  • Chicory (or endive)

Directions

  • Sauce
  • In a hot pan with a drizzle of oil, add the diced mushrooms;
  • Add 1 chopped onion and mix;
  • Add 1 chopped girl’s finger pepper;
  • Add 1 bay leaf;
  • Add 4 cloves of minced garlic and mix;
  • Add 2 Tablespoons of unsalted butter;
  • Add 2 Tablespoons of flour;
  • Mix well and let it cook;
  • Add 100ml White Wine and mix;
  • Add 700ml whole milk gradually while mixing;
  • Add some nutmeg;
  • Add some black pepper and salt;
  • Turn off the fire;
  • Mounting
  • Pre-cook the dough to make it soft;
  • In a baking dish, add a little sauce to the bottom;
  • Add 1 layer of dough;
  • Add 1 layer of sauce (little sauce);
  • Add 1 layer of chopped ham;
  • Add 1 layer of cheese;
  • Add a layer of raw Chicory/Escarole;
  • Repeat the process until all ingredients are used;
  • On the last layer add grated parmesan;
  • Place the lasagna in a preheated oven at 250 degrees until browned;
