Ingredients
200g glass noodles (sweet potato noodles)
Handful of spinach
1/2 carrot
1 onion
1 green onion
2 hot green chili
Oyster Mushroom, enoki mushroom
Cooking oil
3 tbsp of sugar
3 tbsp of soy sauce
3 tbsp of water
Perilla or sesame oil
Sesame
Directions
- Soak the noodles in water. (20-30 minutes);
- Prepare vegetables for Japchae.
- Blanch the spinach lightly and season with salt and perilla oil.
- Lightly fry the sliced carrots, onions, green onions, hot green chili, and shredded mushrooms.
- Boil the noodles for 8 minutes and drain the water. (Don’t rinse in cold water, let it sit.)
- Sauce
- Boil 3 tablespoons each of soy sauce, sugar, and water to make a sweet and salty sauce.
- Pour the glass noodles into the sauce and mix, then add perilla oil and all the prepared vegetables and mix.
- Sprinkle with sesame seeds.
