The Instant Pot allows you to quickly cook meals under pressure, reducing the overall cooking time.

Ingredients

  • 1.5 to 2 pounds of stew beef, cut into cubes

  • 1 tablespoon vegetable oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups beef broth

  • 1 cup red wine (optional)

  • 3 carrots, sliced

  • 3 potatoes, cubed

  • 2 celery stalks, chopped

  • 1 cup frozen peas

  • 1 can (14 ounces) diced tomatoes

  • 2 bay leaves

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • 2 tablespoons tomato paste (optional, for extra depth of flavor)

  • 2 tablespoons all-purpose flour (optional, for thickening)

Directions

  • Set the Instant Pot to “Saute” mode and heat the vegetable oil. Brown the beef cubes in batches until they are seared on all sides. Remove the beef and set it aside.
  • Add onions and garlic to the Instant Pot, sautéing until they are softened.
  • Pour in the red wine (if using) to deglaze the pot, scraping off any browned bits from the bottom.
  • Add the beef back to the Instant Pot along with the beef broth, carrots, potatoes, celery, peas, diced tomatoes, bay leaves, thyme, rosemary, salt, and pepper. If using tomato paste, add it at this stage.
  • Seal the Instant Pot and set it to “Pressure Cook” or “Manual” mode. Cook on high pressure for about 35-40 minutes.
  • Once the cooking is complete, perform a quick release of the pressure.
  • If you want a thicker stew, you can mix flour with a little water to make a slurry and stir it into the stew. Simmer on the “Saute” mode until it thickens to your liking.
  • Remove the bay leaves and adjust the seasoning if necessary before serving.
