To prepare your bread at home, you will need to use the ingredients on the list and follow the step-by-step instructions on how to prepare it. 
The shape used has the measurements: 10 width x 24 length x 6.5 height

Ingredients

  • Pre-ferment (Sponge)
  • 113 g (3/4 cup) all-purpose flour

  • 6 g (1/2 tablespoon) instant dry yeast

  • 113 g (1/2 cup) of water

  • Final dough
  • 452 g (3 1/2 cups) all-purpose flour

  • 45 g (6 tablespoons) of sugar

  • 11 g (1/2 tablespoon) salt

  • 45 g (3 tablespoons) unsalted butter

  • 254 g (1 cup) whole milk (if you want to use powdered milk, refer to the spreadsheet)

  • 232 g of pre-ferment

Directions

  • Pre-ferment (Sponge)
  • In a bowl, add 113 g (3/4 cup) of all-purpose flour;
  • Add 6 g (1/2 tablespoon) of instant dry yeast;
  • Add 113 g (1/2 cup) of water;
  • Mix well;
  • Cover and let rest for 30 minutes;
  • Knead well;
  • Final dough
  • In a bowl, add 452 g (3 1/2 cups) of all-purpose flour;
  • Add 45 g (6 tablespoons) of sugar;
  • Add 11 g (1/2 tablespoon) of salt;
  • Mix;
  • Add this mixture to the sponge bowl;
  • Make a hole in the middle of the flour and add 45 g (3 tablespoons) of unsalted butter;
  • Add 254 g (1 cup) of whole milk (if you want to use powdered milk, go to the worksheet);
  • Mix well;
  • Cover and let rest for 5 to 10 minutes;
  • Knead for 10 minutes;
  • Form a ball and let it rest for 1 hour;
  • Grease the mold with butter or oil and set aside;
  • Turn the dough upside down and remove the air from the dough;
  • Fold the sides, forming a triangle;
  • Roll the dough from the thinnest point (at each fold, press it tight with your fingers to seal it well);
  • Seal the seam well;
  • Place the dough in the form, with the seam facing down;
  • Squeeze the dough a little with the palm of your hand;
  • Cover and let rest for 45 minutes;
  • Bake in a preheated oven at 180 degrees for approximately 45 minutes (you can create steam inside the oven using 2 cloths soaked in boiling water inside a roasting pan at the bottom of the oven. After 20 minutes remove the cloths);
