Ingredients
6 to 8 lamb loin chops
4 tablespoons extra virgin olive oil, divided
6 cloves crushed garlic
1/2 teaspoon black pepper
1 tablespoon minced fresh mint
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh oregano
1 tablespoon minced fresh parsley
1 teaspoon salt
2 tablespoons butter
Directions
- In a bowl, add 2 tablespoons of extra virgin olive oil;
- Add 6 cloves of crushed garlic;
- Add 1 tablespoon each of;
- Add mint;
- Add oregano;
- Add parsley;
- Add rosemary;
- Add 1/2 teaspoon of black pepper;
- Mix this all together and make a little paste;
- Then we’re going to take this marinade and rub it over our lamb chops (both sides);
- Then you just pop this in the fridge and let it marinate for at least an hour or you can marinate it for as long as 24 hours;
- Add a bit of salt;
- Get a large heavy skillet heating over medium high heat;
- Add Melt 2 tablespoons of butter;
- Add 2 tablespoons of olive oil;
- Cook them for about 4 to 5 minutes per side;
