Ensure a light and healthy snack with this fit banana pancake!

Ingredients

  • 3 tablespoons tapioca gum

  • 2 whole eggs

  • 1 very ripe banana

  • 1 spoon/scoop of whey protein for the syrup (optional)

  • Peanut paste with cocoa to fill (optional)

  • Cinnamon powder to taste

  • Butter or oil for greasing

Directions

  • Love the ripe banana well and transfer to a container. 
    Add the eggs, tapioca gum and mix well to make it homogeneous.
  • In a preheated skillet with butter or oil, place a little of the dough and brown both sides. 
    Repeat the process with all the dough and arrange the pancakes on a plate.
  • To make the syrup add whey protein in a container and add water little by little, stirring well until a creamy mixture is formed.
  • Use the whey protein syrup and peanut butter with cocoa to cover and/or fill the pancakes. 
    If you prefer, put a pancake and spread the peanut butter, then put another pancake and finish with syrup and cinnamon powder on top.
