Ingredients
1 pound of pasta (such as penne or fusilli)
1 block of feta cheese (8 ounces)
1/2 cup of olive oil
1 pint of cherry tomatoes
4 cloves of garlic, minced
1/2 teaspoon of red pepper flakes
Salt and black pepper, to taste
Fresh basil, chopped, for garnish
Directions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, add the cherry tomatoes, minced garlic, and red pepper flakes. Drizzle with olive oil and toss to coat. Place the feta cheese block in the center of the baking dish.
- Bake in the oven for about 25-30 minutes, or until the tomatoes have burst and the feta cheese has softened and started to turn golden brown on the top.
- While the tomato and feta mixture is baking, cook your pasta according to the instructions on the package.
- Once the tomato and feta mixture is done baking, remove it from the oven and use a fork to mash the feta cheese and tomatoes together into a creamy sauce. Stir until everything is well combined.
- Add the cooked pasta to the baking dish with the tomato and feta sauce, and toss to coat the pasta evenly.
- Season with salt and black pepper to taste, and garnish with chopped fresh basil.
