Ingredients
2 eggplants cut into cubes
1 red pepper
1 yellow pepper
1 chopped onion
Black pepper to taste
Oregano to taste
Olive oil to taste
Salt to taste
Directions
- Place the chopped eggplants in a container, cover with water and soak for 30 minutes.
Then distribute the eggplant cubes in a baking dish and add the diced peppers, chopped onion, oregano, black pepper and salt to taste. - Add plenty of olive oil to the vegetables and mix the ingredients very well.
Place to bake in oven at 180º₢ for approximately 30 minutes.
Carefully remove from the oven, wait to cool at room temperature or in the fridge and the eggplant salad is ready.
