Eggplant salad brings together different flavors and colors, in addition to being very easy to prepare!

Ingredients

  • 2 eggplants cut into cubes

  • 1 red pepper

  • 1 yellow pepper

  • 1 chopped onion

  • Black pepper to taste

  • Oregano to taste

  • Olive oil to taste

  • Salt to taste

Directions

  • Place the chopped eggplants in a container, cover with water and soak for 30 minutes. 
    Then distribute the eggplant cubes in a baking dish and add the diced peppers, chopped onion, oregano, black pepper and salt to taste.
  • Add plenty of olive oil to the vegetables and mix the ingredients very well. 
    Place to bake in oven at 180º₢ for approximately 30 minutes. 
    Carefully remove from the oven, wait to cool at room temperature or in the fridge and the eggplant salad is ready.
