2 onions
25ml of olive oil
2 garlic cloves
1 bay leaf
4 ripe tomatoes
2 cans of sardines
1 handful of parsley and chives
1/2 can of corn
1/2 can of peas
Salt and black pepper to taste
2 boiled eggs
1 glass of good quality palm heart
200g flaked corn flour
Directions
- Add 1 tsp of oil to the pan over low heat;
- Cut the 2 onions and add;
- Add salt and black pepper;
- Cut 4 ripe tomatoes and add;
- Mix;
- Add bay leaf;
- Chop 2 cloves of garlic and add;
- Mix;
- Add corn;
- Add pea;
- Mix;
- Add sliced sardines;
- Mix;
- Add pepper and mix;
- Try and adjust the salt, pepper and seasoning, as it will later lose its taste when adding the cornmeal;
- Add chopped boiled eggs;
- Add chopped hearts of palm;
- Add fresh chopped parsley;
- Add a little water to form a broth;
- Grease a form with oil;
- Add pieces of eggs, tomato and sardines to the bottom of the mold to decorate when you unmould;
- Gradually add the cornmeal to the pan while mixing;
- Turn off the fire;
- Taste the salt to correct if necessary;
- Put the dough in the form, pressing;
- Unmold the couscous;
- Your couscous from São Paulo is ready!
