Ingredients
3 eggs
3 tablespoons of oil or butter
1 can of corn without the liquid
1 can of lightly moistened corn flakes
1/2 cup of coconut milk (fill in with filtered water)
1/3 of a can of sugar
1 tablespoon of chemical yeast
Salt to taste
Directions
- In the blender add the eggs, the corn without the liquid, the oil or butter, the coconut milk with filtered water, the sugar, the moistened corn flakes, salt to taste and beat for about 2 minutes.
Add the yeast to the mixture and stir lightly until the dough is homogeneous. - Pour into a greased and sprinkled with cornmeal.
Preheat the oven to 180º₢, bake for about 20 minutes at 200º₢ and then bake for another 15 minutes at 250º₢ until golden.
Remove from the oven, allow to cool and the corn cake is ready to serve.
