Ingredients
1 liter of whole milk
100 grams of grated coconut
200 ml of coconut milk
1 cup (110 grams) corn starch
1 box of sour cream (200 grams)
1 can of condensed milk (395 grams)
300 grams of plums in syrup
1 cup of water (240 ml)
1 cup (tea) of sugar
Directions
- Add the milk and cornstarch to a pan and mix well.
Add condensed milk, cream, coconut milk and grated coconut.
Bring to a simmer over medium heat and cook, stirring constantly, until it thickens and has a porridge-like consistency. - Transfer the mixture from the pan to a greased pan, spread it out by smoothing the surface with a spatula and cover the dessert with cling film.
Place in the fridge for at least 2 hours, or until the manjar is very firm. - To prepare the syrup, place the water, sugar and drained plums in syrup in a pan.
Place over medium heat and stir occasionally until the broth has reduced to a consistency similar to honey. - Wait for the syrup to come to room temperature.
Then unmold the delicacy on a platter or plate, pour the plum syrup over the dessert and serve the frozen coconut delight.
