Ingredients

  • 1.5 lbs (about 700g) boneless, skinless chicken thighs or breasts, cut into strips

  • 1/4 cup soy sauce

  • 2 tablespoons fish sauce

  • 2 tablespoons honey or brown sugar

  • 1 tablespoon curry powder

  • 2 cloves garlic, minced

  • 1 tablespoon grated fresh ginger

  • Bamboo skewers, soaked in water for at least 30 minutes

Directions

  • In a bowl, mix together soy sauce, fish sauce, honey or brown sugar, curry powder, minced garlic, and grated ginger to create the marinade.
  • Add the chicken strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or ideally, marinate for a few hours or overnight.
  • Preheat your grill or grill pan to medium-high heat.
  • Thread the marinated chicken strips onto the soaked bamboo skewers.
  • Grill the chicken skewers for about 5-7 minutes per side or until fully cooked and slightly charred.
