Chicken casserole can be made in many different ways, and the ingredients and seasonings can be customized to suit individual tastes. It is a hearty and satisfying meal that is perfect for feeding a family or for meal prepping for the week ahead.


  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 cups sliced mushrooms

  • 1 cup chopped onion

  • 1 cup chopped celery

  • 1 cup chopped carrots

  • 3 cloves garlic, minced

  • 1/4 cup all-purpose flour

  • 2 cups chicken broth

  • 1 cup milk

  • 1 tsp dried thyme

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 cup frozen peas

  • 4 cups cooked white rice

  • 2 cups shredded cheddar cheese


  • Preheat oven to 350°F.
  • In a large skillet, cook chicken over medium-high heat until browned on all sides. Remove chicken from skillet and set aside.
  • In the same skillet, add mushrooms, onion, celery, carrots, and garlic. Cook until vegetables are softened, about 5-7 minutes.
  • Sprinkle flour over vegetables and stir to combine. Gradually stir in chicken broth and milk, stirring constantly, until sauce is smooth.
  • Add thyme, salt, and pepper to the sauce and bring to a simmer. Simmer for 2-3 minutes, stirring occasionally.
  • Add chicken and peas to the sauce and stir to combine.
  • In a 9×13 inch baking dish, spread cooked rice evenly on the bottom.
  • Pour chicken mixture over the rice, spreading it evenly.
  • Top with shredded cheddar cheese.
  • Bake for 25-30 minutes, until cheese is melted and casserole is heated through.
  • Serve hot and enjoy!
