Chicken cacciatore is all the comfort.
Now, there are so many versions of this beautiful hunter-style, Italian dish, and mine is easy and absolutely delicious.
Braised chicken with mushrooms and peppers in an herby tomato and wine broth, a family favorite.


  • 6 chicken thighs bone in, skin on, trimmed of excess fat

  • Kosher salt and black pepper

  • Extra virgin olive oil

  • 1 small yellow onion chopped

  • 2 celery ribs chopped

  • ½ red bell pepper chopped

  • ½ green bell pepper chopped

  • 8 ounces mushrooms (white or baby bella) cleaned and sliced

  • 3 garlic cloves minced

  • 1 tsp oregano

  • 3 springs fresh thyme

  • 2 tbsp fresh chopped parsley more for later

  • Pinch red pepper flakes

  • 1 cup red wine

  • 28 ounce can crushed tomatoes


  • We’re gonna go ahead and season the chicken with some kosher salt and black pepper.seasoned chicken
  • So, we’re gonna just head over to the stove and cook this party in one big pan. We’re gonna turn the heat to like medium-high-ish, and we’re gonna heat up a little bit of good extra virgin olive oil. We’re gonna warm up the olive oil until shimmering, but not smoking.
  • I’m gonna start with the skin side down first.chicken skin down

  • Revive the chicken and add the onion to the pan.
  • Add the bell peppers.
  • Add some celery, mushrooms, and then we’ve got some garlic.garlic
  • Kosher salt, black pepper, and a little bit of oregano, about a teaspoon more if you like it.
  • Some fresh thyme, three sprigs or so, fresh parsley, and a pinch of red pepper flakes.
  • Toss;toss
  • A good cup of red wine going right in here, and we’re gonna let it simmer for a few minutes for the wine to reduce by about a half or so.
  • An amazing base with tons of flavor going on right here for the sauce, and I’m hitting it up with some crushed tomatoes, from a can, obviously, and we’re gonna let this simmer for a good five to seven minutes or so.
  • Now, we add our chicken back.chicken back
  • All right, we’re gonna turn this baby to medium-low. We’re gonna cover our pan and let our chicken simmer for, oh, 25 to 30 minutes, or until it’s perfectly done.
