Simplicity and flavor are the face of this carrot souffle!


  • 450 grams of boiled carrots

  • 4 eggs (whites and yolks separated)

  • 2 tablespoons of wheat flour

  • 1 tablespoon grated Parmesan cheese

  • 1 pinch of grated nutmeg

  • 1/2 cup (tea) milk

  • 1/2 teaspoon of salt


  • Chop the boiled carrots and place in a blender. 
    Add the milk, wheat flour, salt, grated Parmesan cheese, grated nutmeg and beat for a few minutes.
  • Transfer the mixture to a saucepan, place over medium heat and stir constantly until thickened. 
    Remove the pan from the heat, add the yolks and mix well.
  • Whisk the egg whites in a stand mixer until frothy and add to the pan off the heat. 
    Stir until homogenized and pour the mixture into a form. 
    Bake for about 30 to 35 minutes in the oven preheated to 180º₢ and the carrot souffle is ready.
