Here’s a simple and delicious recipe for Cannellini Beans Salad:


  • 2 cans (15 ounces each) cannellini beans, drained and rinsed (or you can use cooked dried beans)

  • 1 cup cherry tomatoes, halved

  • 1/2 cup red onion, finely chopped

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup extra-virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • Optional: 1/2 cup feta cheese, crumbled


  • In a large bowl, combine the cannellini beans, cherry tomatoes, red onion, and fresh parsley.
  • In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and pepper.
