Caesar dressing is known for its bold and savory taste, making it a favorite for those who enjoy a zesty and rich salad dressing. When used on Caesar salads, it is often drizzled over romaine lettuce and topped with croutons and additional Parmesan cheese.

Ingredients

  • 1/2 cup mayonnaise

  • 2-3 cloves garlic, minced

  • 2-3 anchovy fillets, minced or 1-2 teaspoons anchovy paste

  • 2 tablespoons freshly squeezed lemon juice (about 1 lemon)

  • 1 teaspoon Dijon mustard

  • 1/2 cup grated Parmesan cheese

  • 1/4 teaspoon Worcestershire sauce

  • Salt and black pepper to taste

  • 1/3 cup extra-virgin olive oil

Directions

  • In a bowl, combine the mayonnaise, minced garlic, minced anchovies or anchovy paste, lemon juice, Dijon mustard, grated Parmesan cheese, and Worcestershire sauce. Stir these ingredients together until well combined.
  • Taste the mixture and add salt and black pepper to your liking. Be mindful of the salt, as anchovies and Parmesan cheese are already quite salty. You can always add more later if needed.
  • Slowly drizzle in the extra-virgin olive oil while continuously whisking or stirring the mixture. This gradual addition of olive oil helps emulsify the dressing, creating a creamy and smooth texture.
  • Continue to whisk or stir until the dressing is well blended and has reached your desired consistency. If the dressing is too thick for your preference, you can add a little more olive oil and whisk it in.
  • Taste the Caesar dressing and adjust the seasoning, adding more lemon juice, salt, or black pepper if necessary.
  • Once you’re satisfied with the flavor and consistency of the dressing, it’s ready to use. You can store it in the refrigerator for a few days in an airtight container.
