  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup granulated sugar

  • 1 teaspoon pure vanilla extract

  • 2 1/2 cups all-purpose flour

  • 1/4 teaspoon salt

Directions

  • Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy. This can be done using an electric mixer or by hand with a sturdy spoon.
  • Add the vanilla extract to the butter and sugar mixture, and continue to mix until well combined.
  • In a separate bowl, whisk together the flour and salt.
  • Gradually add the flour mixture to the butter mixture, mixing just until combined. Be careful not to overmix, as this can result in a tougher texture.
  • The dough may be a bit crumbly, but it should come together when you press it. If needed, use your hands to gently knead the dough until it forms a cohesive ball.
  • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Chilling the dough helps prevent the cookies from spreading too much during baking.
  • Once chilled, roll out the dough on a floured surface to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes, or form the dough into logs and slice for round cookies.
  • Place the cookies on the prepared baking sheets, leaving some space between each.
  • Bake in the preheated oven for 10-12 minutes or until the edges are just lightly golden. Keep a close eye on them, as baking times may vary based on your oven and the size of your cookies.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
