Ingredients

  • 4 cups broccoli florets

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 4 tablespoons unsalted butter

  • ¼ cup all-purpose flour

  • 3 cups vegetable or chicken broth

  • 2 cups milk

  • 2 cups shredded cheddar cheese

  • Salt and pepper to taste

Directions

  • In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and fragrant.
  • Sprinkle the flour over the onion and garlic mixture, and stir well to create a roux. Cook for a minute or two, stirring constantly.
  • Slowly pour in the vegetable or chicken broth while whisking continuously to prevent lumps from forming. Bring the mixture to a simmer.
  • Add the broccoli florets to the pot and simmer for about 10-15 minutes, or until the broccoli becomes tender. You can partially blend the soup with an immersion blender or transfer a portion to a blender and blend until desired consistency is reached. This step is optional, depending on whether you prefer a chunkier or smoother soup.
  • Reduce the heat to low and stir in the milk. Gradually add the shredded cheddar cheese, stirring until it melts and incorporates into the soup. Continue to stir until the soup becomes smooth and creamy.
  • Season with salt and pepper to taste. Keep in mind that the cheese will add some saltiness, so adjust accordingly.
  • Remove the pot from heat and let the soup sit for a few minutes to thicken slightly.
  • Serve the broccoli cheddar soup hot in bowls, and you can garnish with additional shredded cheddar cheese or some steamed broccoli florets if desired.
