With very few ingredients, this brevity cake recipe is not only delicious but also super economical!

Ingredients

  • 3 eggs

  • 2 cups of sweet potato powder

  • 1 and 1/3 cup (tea) of sugar

  • Vanilla essence to taste

  • Lemon zest to taste

Directions

  • Place the egg whites in a mixer and beat until the mixture doubles in size. 
    With the mixer running, gradually add the egg yolks, then the lemon zest, the vanilla essence and beat for about another 3 minutes.
  • Gradually add the sugar with the mixer running and beat again for another 3 minutes. 
    Add the sweet sprinkle and beat on maximum speed for another 3 minutes. 
    Transfer the dough to a greased and floured form.
  • Preheat the oven to 180º₢ and bake the cake for approximately 30 to 40 minutes, or until golden on the outside and dry on the inside.
  • Wait for the cake to cool to room temperature, unmold it on a platter or plate of your choice and the brevity recipe is ready to serve.
