The frittata, from the Italian fritto (participle of the verb friggere (to fry) and from the Latin frixùra), is a specialty of Italian cuisine similar to the Spanish omelette and that is usually filled with different ingredients such as meat, vegetables, cheeses, mushrooms , etc.

In Spain there is the potato omelette and in France there is the omelette, which unlike the frittata must remain creamier and the other ingredients are added at the end of cooking, when the omelette is folded on itself. In Germany and Austria, the tortilla is served in the form of pancakes cut into strips and rolled, it is served in broth. Instead of being made in the form of a leaf like the rest of tortillas, the Frittata is open and the seasonings are added. and accompaniments on the top (similar to a pizza). It can be prepared similar to the Spanish omelette.
