They are a hearty and satisfying breakfast option that provides a mix of protein, carbohydrates, and flavors to start the day.


  • For the filling:
  • 4 large eggs

  • 1/4 cup milk

  • Salt and pepper to taste

  • 1 tablespoon butter or oil for cooking

  • 1/2 cup diced cooked breakfast meat (e.g., bacon, sausage, ham)

  • 1/2 cup diced bell peppers (any color)

  • 1/4 cup diced onion

  • 1/4 cup diced tomatoes

  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your choice)

  • 4 large flour tortillas

  • Optional toppings:
  • Salsa

  • Sour cream

  • Avocado slices

  • Hot sauce


  • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Heat the butter or oil in a large skillet over medium-high heat. Add the diced breakfast meat and cook until it’s heated through and slightly crispy. Remove from the skillet and set aside.
  • In the same skillet, add a little more butter or oil if needed and sauté the diced bell peppers and onions until they are tender and slightly caramelized. Add the diced tomatoes and cook for an additional 1-2 minutes. Remove the vegetables from the skillet and set aside.
  • Pour the egg mixture into the skillet and cook over medium heat. Stir continuously to scramble the eggs until they are just set but still slightly creamy.
  • Warm the tortillas in the microwave or on a dry skillet for a few seconds to make them pliable.
  • Lay out each tortilla and place a portion of the scrambled eggs, cooked breakfast meat, sautéed vegetables, and shredded cheese in the center of each tortilla.
  • Fold the sides of the tortilla over the filling.
  • Starting from the bottom, roll up the tortilla tightly to encase the filling.
  • Place the rolled burritos seam-side down to hold them together.
  • If desired, you can heat them briefly in the skillet to melt the cheese and make the burrito slightly crispy on the outside.
  • Serve the breakfast burritos hot with your choice of toppings like salsa, sour cream, avocado slices, or hot sauce.
