Ingredients

  • 3 to 4 pounds of beef back ribs or short ribs

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1 cup beef broth

  • 1 cup red wine (optional)

  • 2 tablespoons tomato paste

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 1 bay leaf

Directions

  • Preheat your oven to 325°F (163°C).
  • Season the beef ribs with salt and pepper, ensuring an even coating.
  • Heat olive oil in a large, oven-safe pot or Dutch oven over medium-high heat.
  • Sear the ribs on all sides until they develop a golden-brown crust. This step helps lock in flavor.
  • Add chopped onions and minced garlic to the pot. Cook until the onions are softened and translucent.
  • Pour in beef broth, red wine (if using), tomato paste, Worcestershire sauce, soy sauce, thyme, rosemary, and add a bay leaf. Stir the ingredients to combine.
  • Place the seared ribs into the pot, ensuring they are partially submerged in the liquid.
  • Bring the liquid to a simmer, then cover the pot with a lid.
  • Transfer the pot to the preheated oven and let the ribs cook for 2.5 to 3 hours. The slow cooking process will make the meat tender.
  • Check the ribs periodically. They are done when the meat easily pulls away from the bone.
  • Remove the bay leaf and discard it.
  • Serve the beef ribs with your favorite side dishes, such as mashed potatoes, vegetables, or a side salad.
