Baba Ghanoush is similar to hummus but it calls for grilled or roasted aubergine instead of chickpeas.
Ingredients
3-4 Aubergine use male aubergine they are less seedy
3 cloves Garlic
1 tbsp Tahini
1 tbsp Olive oil
Mint
Parsley
Seasoning
Directions
- Burn your aubergine straight on the burner (but that can get messy, which is a bit extra cleaning at the end. But you can put them on a griddle known also known as tawa which will do the same job but with some spare time). Once the aubergine is ready it will have a crispy skin and quick;
- Put them in a bowl and cover with cling film that will
make the peeling a lot easier after 15 minutes its are nicely cooled down and
the skin is coming out with a little pinch; - Chop the aubergine;
- Chop and add some garlic parsley and mint.
- Add tahini and lemon juice;
- Add salt and olive oil;
- Mix;
- Your Baba Ganoush is ready!
